Herbed Ricotta Cheese and Portobello Mushroom Sandwich
Here is a healthy and flavorful vegetarian sandwich recipe that we just tried and tasted. Even non-vegetarians will be impressed. We’ll bet you a big fat sandwich.
Herbed Ricotta Cheese and Portobello Mushroom Sandwich – makes 2 healthy sandwiches
Ingredients:
- 4 ounces ricotta
- 1 tablespoon dry parsley
- 1 tablespoon grated shallots
- 1/8 teaspoon of lemon zest
- ¼ teaspoon red pepper flakes (less if you desire)
- 1/4 teaspoon salt
- 2 portabello mushrooms slice thinly
- ½ tablespoon olive oil
- 4 slices of your favorite whole-grain bread
Wisk the ricotta, parsley, shallots, lemon zest, red pepper and ½ the above salt together in a bowl.
Toast the bread.
Preheat pan over medium high heat. Lightly brush mushrooms all over with olive oil and season with rest of salt. Cook mushrooms in pan for about 5 minutes, turn over and cook for a few additional minutes.
Spread the herbed ricotta mix onto 4 slices of toast. Add the mushrooms onto two slices. Cover with remaining ricotta covered slices. Eat!
