Healthy Turkey Sandwich

Healthy Turkey Sandwich by EmerilIf you want to do something healthy and different with your Christmas turkey leftovers, here is a healthy turkey sandwich recipe slightly adapted from master chef Emeril Lagassee’s, great book 20-40-60.  And, this recipe is so simple!

Pressed Turkey, Pesto and Provolone Sandwich

Ingredients:

  • 1 tablespoon of prepared pesto (we like Basil Pesto by Elki)
  • 2 slices of multigrain sandwich bread
  • two slices of provolone cheese
  • about ½ cup of leftover turkey
  • a little olive oil

Preparation:

Spread the pesto on one side of the two bread slices.  Add a slice of cheese then add the turkey and then add the remaining slice of cheese.  Finally, close the sandwich with the remaining slice of bread.  Brush both sides of your sandwich with olive oil.

Preheat grill pan or frying pan over medium heat.  Place sandwich on grill once it is hot.  Weigh down sandwich with skillet or heavy object.  Cook about 4 minutes per side.  (We like using our Le Creuset Panini Press, which we also preheat so that both sides of our healthy turkey sandwich grills at the same time.  When using this method, total cooking time is 3 to 4 minutes.)

Slice sandwich on a diagonal and eat and enjoy your healthy turkey sandwich!
