Bauru Sandwich – Famous Sandwich Of Brazil

Casemiro Pinto Neto, inventor of the Bauru Sandwich with his daughterThe Bauru sandwich is the namesake of the city of Bauru.  With a population over 360,000, Bauru is located in the State of Sao Paulo, Brazil.  It’s where Pelé began playing soccer and where Brazilian astronaut, Marcos Pontes, was born.

The Bauru sandwich actually originated in the city of Sao Paulo at the Ponte Chic restaurant in the early 1930s.  A law student from Bauru, Casimiro Pinto Neto, asked the cook to make a nutritious sandwich to his specifications.  He first asked the cook to (1) use some French bread and remove the soft interior, (2) put in some melted cheese, (3) add a few slices of roast beef, (4) add a few slices of tomato.

The sandwich, not only nutritious, was so delicious that his friends started ordering the “Bauru sandwich.”  It became the Ponte Chic’s best selling item.

There are fanatical lovers of the Bauru sandwich in Brazil and abroad.  Chefs have created many variations—some close to the original and some quite different.  Pickled cucumbers and several cheese variations are common.

To preserve the history of the sandwich, COMTUR (Tourism Council of Bauru) launched in 2006 the “Traditional Bauru.”  The goal:  make establishments serving the Bauru use the original / traditional ingredients.

Traditional Bauru Sandwich Recipe


  • French bread
  • 3 slices mozzarella cheese (part skim)
  • 3 slices tomato
  • 3 slices of roast beef (a loin or rump cut is typically preferred)
  • 2 slices of pickled cucumbers (optional)
  • Salt and oregano to taste

Melt cheese in a bain-marie (you can build your own bain-marie)  or fondue pot.

Bauru SandwichSlice French bread lengthwise and remove the soft interior (the crumb).  Add the roast beef onto one-half of the bread. Add the salt and oregano.  Add the tomato.  Add the cucumber.  Add the melted cheese (which will heat the entire sandwich).  Cover with other bread slice.  Eat!

For a popular variation, melt a slice of provolone, a slice of Swiss and a slice of Steppe.  For a more calorie friendly Bauru, use only one slice of melted cheese.  Reduce sodium by excluding the pickled cucumbers.
